I’ve been picking up berries every week at the farmer’s market, so I wanted to get creative and make a Paleo friendly treat. My friend and fellow Paleo/Primal enthusiast Amanda and I were chatting one day at Hooverball and she mentioned that she had tried to make whipped cream with coconut milk. It’s pure fat, much like whipping cream so it makes sense. Vegan and raw foodies use coconut milk to make whipped cream. I was intrigued and thought I’d give it a whirl. Guess what? It turned out AMAZING and it’s so easy to make This picture doesn’t do it justice – it actually does look like whipped cream, but the first time I made it (when I took this pic) I used a bit too much ground vanilla and hence it ended up a bit less fluffy (and a shade brown from all the vanilla). The next time I made it I used less vanilla and it turned out just like whipped cream. Warning, you need a hand mixer to make this!
Ingredients (using 1 can of coconut milk ~4 servings)
– 1 can of GOOD quality coconut milk (not the light version). Chilled in the fridge for 2 days.
– 1 tsp ground vanilla beans – I found these at a health food store made by “Organic Traditions”, but you can get whole vanilla beans at Whole Foods
– the zest of 1/2 an orange
– the juice of 1/4 an orange
– berries or any fruit that you want to top with cream
Directions:
- Make sure your coconut milk has been chilled. If you didn’t do that, pop it in the freezer for a couple hours to speed up the chilling process.
- The cream from the coconut should have separated from the water and be sitting at the top of the can. Carefully scoop it out into a bowl and don’t include any water.
- Add the vanilla, orange zest and squeeze of juice.
- Using a hand mixer (you must use a hand mixer….sorry folks, there is no other way), whip the cream until it fluffs up a bit (about 3 min).
- Serve immediately or chill in the fridge for later use. This is also great topped with some toasted coconut shreds.
- Enjoy!

I know it’s supposed to be simple, but can you post your spice rub for the chicken? I can never get mine right. I either have too much on the chicken and then it gets dry and burns and flakes off, or not enough. Do you add liquid? my boy always uses something to make it a muddy consistency before rubbing… please help my stupid self so that i can make a good roast chicken. i’ve ruined 3.

Hi Jenn – I never use liquid…only about 1.5 Tbsp of a dry rub. You can make Emeril’s Essence recipe and use some of that:
2 1/2 tablespoons paprika
2 tablespoons salt – I would go with 2 tsp instead!
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Or I often use a spice rub mix from The Healthy Butcher. Their “Port of Spain” and “Malaysian” rubs work well and are totally PALEO! Find one w/out sugar and you’re good to go. I probably only ever use 1.5 Tbsp of rub on the whole bird. Hope this helps!

I just whipped up a batch of this and wow … delish! I used the 365 Brand Organic Coconut milk and pretty much had an entire tin of cream to work with. I even dropped a spoonful in my coffee for another extra creamy treat!

This looks really refreshing! I’ve not been using coconut milk that much… not sure why, but I can’t decide if I like it or not. This might be the way to fix it up. Raspberries are in season right now at the farmers’ market so this is timely indeed.
Roast chicken recipe looks great. I am going on travel for a few days this week for work, otherwise I would fix it today! Whole chicken is sooooo easy, and so cheap. Even if you buy free-range organic from the farmers’ market, the price is still great per pound. Nothing beats the taste of a well-roasted chicken skin. The right combination of crunchy and gooey chewy with some saltiness. And the drippings… lick it right out of the pan.

I just wanted to say that this blog is INCREDIBLE! A friend referred me and it’s just divine. I’m on a healthy eating program and in about 2 weeks I will have to transition to eating NO SUGAR OR STARCHES for 3 weeks straight so most of your recipes are great for that. I think I may even try to use the coconut milk recipe and then freeze it to sub for ice cream. Thank you for posting and keep the recipes coming!

Hi, I get organic coconut milk.
already after i bought it on the top there are solid parts. this is the cream?
this cream is very hard and solid. i not buy the non organic, cause inot know what strange things they add there.

Yes, that is the cream. I still find it works better when it’s chilled.

Hi,
I am just starting Paleo today and went to get some staples at the store and found your recipe and since I am a sweets addict I figured I’d better buy some coconut milk. Do you put the whole can in the fridge before making this or do you empty the can into something else and then cool for the 2 days? Just want to make sure I get the best “whipped cream”!

@Rebecca – I put the entire can in the fridge. I find Organic Native Forest brand is the best if you can find it. If I can give you a couple words of advice on your first 30 days….I would definitely try to limit your fruit consumption. It makes coming off sweets much easier and will ease the cravings. Thanks for the advice. I don’t tend to eat alot of fruit in general, maybe one or two pieces a day but I am relying on fruit to help with the sugar cravings! Last night I had some frozen berries with a little heavy cream and a few macadamia nuts and it was great. But I definitely get what you are saying. I only wish I could do crossfit!!! I am stuck with treadmill and elliptical and circuit for now. Crossfit is way too expensive in my area!
