I miss pasta…My mom and grandma made the best spaghetti and meatballs when I was growing up and it was one of my favourite meals.  I came up with this dish to see how well zucchini works as pasta.  Zucchini is awesome – especially if you’re doing Zone blocks for your Carbs.  You can eat so much of it – 1 block = 1 1/3 cup cooked!  Here is the recipe:

Ingredients (serves 4):
– 1 Pound Lean Ground Turkey
– 1/2 Cup finely chopped onion
– 2 Tbsp chopped garlic (i like to use alot so reduce if you don’t)
 – 1 Tbsp chopped basil (use 1 tsp if you’re not using fresh)
– 1 Tbsp chopped oregano 
– 1 tsp chopped thyme
– 1/4 tsp cayenne pepper
– 1 egg
– 3 Tbsp ground almonds
– a pinch of sea salt and pepper 

Zucchini Spaghetti & Sauce 
– 2 x 14 oz cans of tomatoes (the one’s with only Tomato as the ingredient).  I like the canned cherry tomatoes by Mara’s
1/2 Cup onion
–  1 T garlic (Alert: don’t eat this if you’re going on a date or job interview later – there is alot of garlic in this recipe)
–  7 Zucchini
– 2 Cups Cremini Mushrooms
– 1 tsp red chili paste – if you like heat

In a large bowl combine all of the Meatball ingredients and mix them together by hand 
Heat your skillet with some olive oil (~ 1-2 Tbsp) to a Med-High heat
3. Form meatballs with your hands and place into the hot skillet
4. Allow the meatballs to sear (about 5-7 min) and flip them over to sear the other side for another 5-7 minutes 
Add the canned tomatoes.  I also added some more basil, the chili paste and a bit more onion. Let the meatballs simmer in the sauce covered at a lower heat.
6. While the meatballs are simmering, heat another large pan with some olive oil (1-2 Tbsp)

7. Cut the zucchini into spaghetti-like strips.  You can easily use a mandoline. Chop the mushrooms
8. Add the garlic and onion to the pan and allow it to soften
9. Add the zucchini and mushrooms.  
10. Cook the zucchini spaghetti until it is softened (~ 10 minutes).  By now your meatballs and sauce are ready.
11. Combine and serve
